This week's chef is Sean who has been living on the island for the past 7yrs. Originally Australian, after completing his training with Hilton Hotels he has worked all over the world cooking international cuisine. He now works at Cafe Lounge every Wednesday from 7pm accompanied by Paul Benham on the sounds.

 

Thai Baked Whole Fish


 

1 whole fish 1 ½ - 2 kgs
coriander

ginger

lemon

garlic

chilis

mint

salt and pepper

oil

baking tray

aluminum foil

an oven – most important!!

Okay, Buy fish cleaned scaled and gutted.  Chop up an equal mix of ginger, garlic, chili and mix.  Chop up a bunch of coriander and leaves of mint.  Cut lemon into slices.

Pat dry the fish and cut diagonally across the fish with a sharp knife.  Rub the garlic, chili, ginger, salt and pepper, mixture into the fish on both sides.  Place some inside also.

Place the fish on a large sheet of foil in the middle.  Place lemon slices on the fish.  Sprinkle coriander.

Fold up the foil to make a parcel leaving room for the hot air to steam the fish.  Double fold the top seam of the foil.

Heat the oven to 180 and bake for about 20 – 30 minutes.  The foil will have risen to resemble a dangerous camping pillow.
