Thai Baked Whole Fish

1 whole fish 1 ½ - 2 kgs
coriander
ginger
lemon
garlic
chilis
mint
salt and pepper
oil
baking tray
aluminum foil
an oven – most important!!
Okay, Buy fish cleaned scaled and gutted. Chop up an equal mix
of ginger, garlic, chili and mix. Chop up a bunch of coriander
and leaves of mint. Cut lemon into slices.
Pat dry the fish and cut diagonally across the fish with a
sharp knife. Rub the garlic, chili, ginger, salt and pepper,
mixture into the fish on both sides. Place some inside also.
Place the fish on a large sheet of foil in the middle. Place
lemon slices on the fish. Sprinkle coriander.
Fold up the foil to make a parcel leaving room for the hot air
to steam the fish. Double fold the top seam of the foil.
Heat the oven to 180 and bake for about 20 – 30 minutes. The
foil will have risen to resemble a dangerous camping pillow.
Delicious
with rice and nice white wine.
Remember to thank The Virgin St Carmen for the little
fishes!
Enjoy!
